Potato fritters are a much-loved addition to Sunday dinners, especially when served with dishes like cauliflower and cheese sauce. It’s a fun, easy, and delicious way to enjoy potatoes in a slightly different form.
This recipe is simple to make, and the best part is how adaptable it is — you can add your favourite spices, herbs, or even some hidden vegetables for extra flavour and goodness.
Ingredients
- 4 medium to large potatoes
- 1 medium onion, cut in half
- 2 eggs
- 1 tablespoon vegetable spice or mixed herbs
- Salt, to taste
- Pepper, to taste
- ½ cup flour
- Cooking oil, for frying
Method
- In a large bowl, grate the potatoes using a cheese grater. You can use both the coarse and fine sides for varied texture.
- Place the grated potatoes in a muslin or cheesecloth and squeeze out all the excess liquid. If you don’t have a cloth, use your hands to press out the moisture.
- Return the grated potatoes to the bowl.
- Using the coarse side of the grater, grate the onion and add it to the potatoes.
- Add the eggs, spice, salt, and pepper. Mix well.
- Add the flour and mix until all ingredients are well combined. The mixture should hold together.
- If the mixture is too wet, add a little more flour, mixing well each time, until it reaches the right consistency.
- Heat enough oil in a pan for shallow frying over medium-high heat.
- Once the oil is hot, add a large spoonful of the mixture to the pan and gently flatten.
- Avoid making them too thick, as they will take longer to cook through.
- Fry until the bottom side turns golden, then flip and cook until the other side is golden as well.
- Remove the fritters from the oil and place them on a paper towel to absorb any excess oil.
- Repeat the process until all the fritters are cooked.
Serving Suggestions
Serve hot as a side dish with roasts, grilled meats, or creamy vegetable dishes. They also make a great snack when served with a dipping sauce or chutney.
