Made with pantry staples and ready in under 30 minutes, this recipe is an excellent choice when you’re looking for something warm, satisfying, and full of flavour.
Ingredients
- 250 g mushrooms, sliced
- 200 g thinly sliced biltong
- 2 × 50 g packets mushroom soup powder
- 4 cups milk
- 2 cups water
- 1 cup fresh cream (optional)
- Extra sliced biltong, for serving (optional)
Method
- Heat a large non-stick saucepan or pot over medium heat.
- Add the sliced mushrooms and cook until golden brown. If using a regular saucepan, add a small knob of butter to prevent sticking.
- Remove the mushrooms from the pot and set aside.
- Add the mushroom soup powder to the same pot.
- Gradually whisk in a small amount of the milk to form a smooth paste.
- Slowly whisk in the remaining milk and water until the soup powder has completely dissolved.
- Place the pot over medium heat and bring the soup to a gentle simmer.
- Stir in the sliced biltong and simmer for a few minutes.
- Add the cream, if using, and continue simmering for 5 minutes, or until the soup has thickened.
- If the soup becomes too thick, add a little extra milk or water until you reach your preferred consistency.
- Ladle the soup into bowls and top with the reserved golden mushrooms and extra sliced biltong before serving.
Serving Suggestions
Serve hot with:
- Fresh crusty bread
- Buttered rolls
- Garlic bread
- Cheese toasties
- Homemade croutons
Variations
- Add baby spinach during the final few minutes of cooking for extra colour and nutrition.
- Stir in grated cheddar cheese for an even richer, creamier soup.
- Add a teaspoon of wholegrain mustard for extra depth of flavour.
- Sprinkle with freshly chopped parsley or chives before serving.
- For a spicy twist, add a pinch of chilli flakes or cracked black pepper.
Kitchen Tip
Because biltong is naturally salty, taste the soup before adding any additional seasoning. The mushroom soup powder and biltong usually provide plenty of flavour on their own.
Creamy, comforting, and full of authentic South African flavour, this Easy Biltong & Mushroom Soup is sure to become a family favourite.
