Ingredients

  • 2 × 50 g packets Knorr Rich Oxtail Soup
  • 7 cups water
  • 2 cups diced potatoes (about 1 cm cubes)
  • 1 cup frozen peas
  • 1 to 1½ cups leftover roast beef, shredded or diced (optional)
  • Freshly ground black pepper, to taste
  • Chopped fresh parsley, for garnish (optional)

Method

  1. Empty the soup powder into a large saucepan or pot.
  2. Gradually whisk in a small amount of the water to form a smooth paste.
  3. Slowly whisk in the remaining water until the soup powder has completely dissolved.
  4. Place the pot over medium heat and bring to a gentle simmer.
  5. Add the diced potatoes and cook for 12–15 minutes, or until they are almost tender.
  6. Stir in the frozen peas and the leftover roast beef, if using.
  7. Continue simmering for 5 minutes, or until the potatoes are soft, the peas are heated through, and the beef is warmed.
  8. If the soup becomes too thick, stir in a little extra hot water and simmer for another minute.
  9. Season with freshly ground black pepper to taste.
  10. Garnish with chopped fresh parsley before serving, if desired.
