The happiest, softest, chewy blondies loaded with sprinkles – basically birthday cake you can eat with your hands!

Ingredients

  • ½ cup (115 g) butter, melted
  • ¾ cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1½ cups all-purpose flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup rainbow sprinkles (jimmies work best)
  • ½ cup white chocolate chips (optional but so good)

Method

  1. Preheat oven to 180 °C (350 °F). Line a 20 × 20 cm (8 × 8 inch) pan with baking paper.
  2. Mix melted butter and brown sugar until smooth. Add egg and vanilla; beat well.
  3. Stir in flour, baking soda, and salt until just combined.
  4. Fold in sprinkles and white chocolate chips.
  5. Press dough evenly into the prepared pan.
  6. Bake 20–25 minutes until edges are golden (center should still look slightly soft).
  7. Cool completely in the pan, then lift out and cut into squares.

Pro Tips

  • Don’t overbake! A slightly underdone center = extra chewy bars.
  • Use jimmies (the long sprinkles), not nonpareils, to avoid colour bleed.
  • For extra fun, press a few more sprinkles on top right when they come out of the oven.
  • Store in an airtight container up to 5 days… if they last that long!
