The happiest, softest, chewy blondies loaded with sprinkles – basically birthday cake you can eat with your hands!
Ingredients
- ½ cup (115 g) butter, melted
- ¾ cup brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 1½ cups all-purpose flour
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup rainbow sprinkles (jimmies work best)
- ½ cup white chocolate chips (optional but so good)
Method
- Preheat oven to 180 °C (350 °F). Line a 20 × 20 cm (8 × 8 inch) pan with baking paper.
- Mix melted butter and brown sugar until smooth. Add egg and vanilla; beat well.
- Stir in flour, baking soda, and salt until just combined.
- Fold in sprinkles and white chocolate chips.
- Press dough evenly into the prepared pan.
- Bake 20–25 minutes until edges are golden (center should still look slightly soft).
- Cool completely in the pan, then lift out and cut into squares.
Pro Tips
- Don’t overbake! A slightly underdone center = extra chewy bars.
- Use jimmies (the long sprinkles), not nonpareils, to avoid colour bleed.
- For extra fun, press a few more sprinkles on top right when they come out of the oven.
- Store in an airtight container up to 5 days… if they last that long!
