Chicken pie is pure comfort — perfect for any season, any schedule, and any family.
Make it from scratch or shortcut with store-bought roast chicken, cream instead of milk, or frozen puff pastry — it’s endlessly adaptable.
I made mine with a crispy top crust only (easier!), but you can blind-bake a bottom crust too. Serve with salad, steamed veggies, or just as is.
Ingredients
- 1 kg chicken thighs and drumsticks (or leftover roast chicken)
- Salt and pepper to taste
- 1 tbsp olive oil
- 3 garlic cloves, minced
- 200 g mushrooms, sliced
- 1 onion, diced
- 1 green pepper, diced
- 1 x 50 g packet cream of mushroom soup powder
- 500 ml milk (or cream for richer filling)
- ¼ cup fresh parsley, chopped (optional)
- 400 g puff pastry (store-bought is perfect)
- 1 egg, beaten (for glazing)
Method
- Season & brown chicken: Salt and pepper chicken. Heat oil in a large pan over medium-high. Sear chicken until golden on both sides. Remove and set aside.
- Sauté veggies: In the same pan, add garlic, mushrooms, onion, and green pepper.
- Crisp the skin (flavor boost): Remove skin from cooled chicken, slice into strips, and add to the pan. Cook until onions are translucent and mushrooms brown.
- Make creamy filling: Sprinkle in soup powder. Add half the milk, stir until smooth, then add remaining milk. Stir until thickened.
- Add chicken: Chop or shred chicken (discard bones). Stir into sauce with parsley.
- Assemble: Preheat oven to 180°C. Spray a large oven-safe dish. Pour in chicken mixture and spread evenly.
- Top with pastry: Roll out puff pastry to fit. Cover filling completely. Trim or fold excess. Brush with beaten egg.
- Bake: 30 minutes or until pastry is puffed and golden.
Pro Tips
- No time? Use rotisserie chicken + pre-made soup mix.
- Bottom crust? Blind-bake in dish 10 min at 200°C before filling.
- Herby twist: Add thyme, rosemary, or mixed herbs.
- Make ahead: Assemble, cover, refrigerate up to 24 hrs. Bake when ready.
- Freezer friendly: Bake, cool, freeze whole or in slices.
