Ingredients:

  • 1 tin (±400 g) black beans, drained and rinsed
  • 1 tsp taco seasoning
  • 6 tortillas
  • 125 ml (½ cup) grated cheese
  • Salsa, for serving
  • Guacamole, for serving
  • Sour cream, for serving
  • Shredded lettuce, for topping
  • Fresh coriander leaves (optional)

Instructions:

  1. Prepare the beans:
    Add drained black beans to a small pan with the taco seasoning.
    Heat gently over medium heat, stirring occasionally, until warmed through.
  2. Warm the tortillas:
    Heat tortillas in the microwave according to packet instructions, or until soft.
  3. Assemble tacos:
    Spoon the seasoned beans into each tortilla.
    Sprinkle over grated cheese.
    Top with shredded lettuce, salsa, guacamole, sour cream, and fresh coriander (if using).
  4. Serve:
    Serve immediately while warm.

Optional Tips:

  • Add cooked chicken, mince, or roasted veggies for a heartier version.
  • Squeeze lime juice over the top for extra zing.
  • Wrap tacos individually in foil for an easy lunch option.
