Ingredients:
- 1 tin (±400 g) black beans, drained and rinsed
- 1 tsp taco seasoning
- 6 tortillas
- 125 ml (½ cup) grated cheese
- Salsa, for serving
- Guacamole, for serving
- Sour cream, for serving
- Shredded lettuce, for topping
- Fresh coriander leaves (optional)
Instructions:
- Prepare the beans:
Add drained black beans to a small pan with the taco seasoning.
Heat gently over medium heat, stirring occasionally, until warmed through. - Warm the tortillas:
Heat tortillas in the microwave according to packet instructions, or until soft. - Assemble tacos:
Spoon the seasoned beans into each tortilla.
Sprinkle over grated cheese.
Top with shredded lettuce, salsa, guacamole, sour cream, and fresh coriander (if using). - Serve:
Serve immediately while warm.
