Ingredients

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 egg
  • ¾ cup milk
  • ½ cup grated cheese (mozzarella or cheddar)
  • ¼ cup chopped ham or pepperoni
  • ¼ cup diced bell peppers or mushrooms (or a mix)
  • 2 Tbsp pizza sauce or pasta sauce
  • Pinch dried oregano or Italian herbs (optional)
  • Extra cheese or tiny pepperoni slices for topping (optional but worth it)

Method

  1. Preheat oven to 180 °C and grease or line a 24-cup mini muffin tin.
  2. Mix flour and baking powder in a bowl. Add egg and milk, stir until just combined (lumps are okay).
  3. Fold in cheese, ham/pepperoni, veggies, pizza sauce, and oregano.
  4. Spoon into mini muffin cups (fill almost to the top). Add a tiny extra sprinkle of cheese or a pepperoni slice on each if you’re feeling fancy.
  5. Bake 15–18 minutes until golden and puffed. Cool 2–3 minutes, then pop out.

  • Double the batch — they vanish in seconds and freeze beautifully.
  • Lunchbox hack: make the night before; they’re just as good cold.
  • Veggie-loaded: toss in sweetcorn, olives, or spinach.
