Ingredients
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1 egg
- ¾ cup milk
- ½ cup grated cheese (mozzarella or cheddar)
- ¼ cup chopped ham or pepperoni
- ¼ cup diced bell peppers or mushrooms (or a mix)
- 2 Tbsp pizza sauce or pasta sauce
- Pinch dried oregano or Italian herbs (optional)
- Extra cheese or tiny pepperoni slices for topping (optional but worth it)
Method
- Preheat oven to 180 °C and grease or line a 24-cup mini muffin tin.
- Mix flour and baking powder in a bowl. Add egg and milk, stir until just combined (lumps are okay).
- Fold in cheese, ham/pepperoni, veggies, pizza sauce, and oregano.
- Spoon into mini muffin cups (fill almost to the top). Add a tiny extra sprinkle of cheese or a pepperoni slice on each if you’re feeling fancy.
- Bake 15–18 minutes until golden and puffed. Cool 2–3 minutes, then pop out.
