This recipe is close to my heart. It was something I created for my brother and sister-in-law, who used to enjoy a similar dish every year for their anniversary until the restaurant stopped serving it. Working only from their description, this beautiful bowl of creamy, spicy deliciousness was born.

On the day I filmed the video, I cooked for six adults and decided to add some squid heads and tentacles. They’re a bit less expensive than calamari rings but add wonderful flavour and texture. The combination was such a hit that we’ll definitely be doing half and half from now on.

I planned to set aside a plate for photos the next day, but the pan was scraped completely clean. This recipe has been a winner every single time — you won’t regret making it.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 4 garlic cloves, diced
  • 2 chillies (or more, to taste), chopped
  • 1 tablespoon mixed herbs
  • About 200 g chorizo sausage, sliced (or substitute with salami)
  • 1 tablespoon butter
  • Zest of 1 lemon
  • About 800 g calamari rings (you can also add squid heads/tentacles)
  • Peri-peri spice, to taste (approximately ½ to 1 teaspoon depending on chilli strength)
  • 2 teaspoons paprika
  • Salt and pepper, to taste
  • 50 g tomato paste
  • Juice of 1 lemon
  • 500 ml cream (adjust based on your preferred sauce consistency)

Method

  1. Heat olive oil in a large frying pan over medium-high heat.
  2. Add the garlic, onions, and chillies. Fry until the onions are translucent.
  3. Add the mixed herbs, chorizo, butter, lemon zest, and calamari. Mix and fry until the calamari begins to turn white.
  4. Stir in the tomato paste, peri-peri spice, and paprika. Mix well.
  5. Add the lemon juice and cream, then reduce the heat to medium.
  6. Simmer for 20–30 minutes, allowing the sauce to thicken and the flavours to combine.
  7. Test the calamari for doneness: it should be opaque, plump, and tender when gently pressed with a fork. Avoid overcooking, as this can make the calamari tough.

Serving Suggestions

Serve hot with your favourite bread to soak up the creamy, flavourful sauce. It also pairs beautifully with rice or pasta for a hearty meal.
