Ingredients:

  • 125 g butter, room temperature
  • 500 g icing sugar
  • 125 g cream cheese
  • 5 ml vanilla essence
  • 1–2 tsp cinnamon (to taste)

Instructions:

  1. Cream butter and sugar:
    Using an electric mixer, beat butter and icing sugar until smooth and fluffy.
  2. Add flavourings:
    Mix in vanilla essence and cinnamon (start with 1 tsp, adjust to taste).
  3. Incorporate cream cheese:
    Add cream cheese and mix until just combined.
    Tip: Do not overmix, or the frosting may become runny.
  4. Frost the cake:
    Spread over cooled cake.
  5. Optional decoration:
    Top with chopped nuts, berries, candied ginger, raisins, or caramel popcorn for extra flair.

Optional Tips:

  • Chill the frosting slightly before spreading for a firmer texture.
  • For extra flavour, add a pinch of nutmeg or a splash of lemon juice.
  • Works perfectly with carrot cake, spice cake, or red velvet cake.
