Ingredients:
- 125 g butter, room temperature
- 500 g icing sugar
- 125 g cream cheese
- 5 ml vanilla essence
- 1–2 tsp cinnamon (to taste)
Instructions:
- Cream butter and sugar:
Using an electric mixer, beat butter and icing sugar until smooth and fluffy. - Add flavourings:
Mix in vanilla essence and cinnamon (start with 1 tsp, adjust to taste). - Incorporate cream cheese:
Add cream cheese and mix until just combined.
Tip: Do not overmix, or the frosting may become runny. - Frost the cake:
Spread over cooled cake. - Optional decoration:
Top with chopped nuts, berries, candied ginger, raisins, or caramel popcorn for extra flair.
Optional Tips:
- Chill the frosting slightly before spreading for a firmer texture.
- For extra flavour, add a pinch of nutmeg or a splash of lemon juice.
- Works perfectly with carrot cake, spice cake, or red velvet cake.
