Ingredients
- 500 g (1 lb) baby potatoes (the smaller the better)
- 150–200 g cheese cubes – cheddar, gouda, mozzarella, or halloumi all work amazingly
- 150 g cooked sausage (chorizo, kransky, frankfurters) or crispy bacon pieces
- 2–3 tbsp olive oil
- 1 tsp dried Italian herbs or rosemary
- ½ tsp garlic powder (optional)
- Sea salt & cracked black pepper
- Wooden or metal mini skewers
For serving (pick your fave):
- Garlic aioli, sour cream & chives, ranch, or hot honey dip
Instructions
- Boil the baby potatoes in salted water for 12–15 minutes until just fork-tender (don’t overcook or they’ll fall apart). Drain and cool slightly.
- Preheat oven to 220 °C (425 °F) or fire up the air fryer/grill. Toss the warm potatoes in olive oil, herbs, garlic powder, salt, and pepper. Spread on a tray and roast 15–20 minutes (or air-fry 12–15 min), shaking halfway, until golden and lightly crispy on the outside.
- Let potatoes cool just enough to handle. Thread onto mini skewers: potato → cheese cube → sausage/bacon → repeat (finish with a potato so it looks cute).
- Optional extra crisp: pop the loaded skewers back in the oven/air fryer for 3–4 minutes so the cheese just starts to melt.
- Serve warm on a big board with your favorite dip in the middle — watch them disappear in seconds!
