Chicken livers might not be for everyone, but this dish is a favourite in our household. Spicy chicken livers in a creamy tomato sauce, enhanced with crispy bacon and a hint of lemon zest, make for a rich and satisfying meal.
The addition of zucchini adds a subtle freshness, while the bacon (or sandwich ham) adds a deliciously crispy twist. Serve this versatile dish with baked potatoes, mash, bread, or focaccia for a hearty meal the whole family will enjoy.
Ingredients
- 1 tablespoon butter
- 200 g bacon, sliced or in bits
- 1 onion, sliced
- 1 teaspoon sugar
- 2–4 zucchini, sliced (depending on size)
- Chilli, to taste (use a mix if preferred)
- 3 garlic cloves, minced
- Salt, to taste
- 500 g chicken livers
- 1 tablespoon mixed herbs
- Zest of 1 lemon
- Juice of 1 lemon
- 1 medium green pepper, sliced
- 400 g tomato puree
- 250 ml cream
- Fresh parsley, to taste
Method
- In a large frying pan over medium-high heat, add the butter and bacon. Fry until crispy. Remove the bacon and set aside, leaving the oil in the pan.
- Add the garlic, onion, sugar, chilli, and zucchini to the pan. Fry for a few minutes until the onions begin to soften.
- Season with salt and add the chicken livers. Mix in the mixed herbs, lemon zest, green pepper, and lemon juice.
- Add the cooked bacon, tomato puree, and cream. Stir to combine.
- Allow to simmer for 10 minutes, or until the chicken livers are cooked through and tender.
- Sprinkle with fresh parsley before serving.
