Ingredients:

  • 1 bag tortilla chips
  • 1 tin (400 g) black beans, drained and rinsed
  • 1 cup grated cheese (or more, to taste)
  • ½ tsp chilli powder (optional)
  • Salsa, for serving
  • Guacamole, for serving
  • Sour cream, for serving
  • Fresh coriander leaves, for garnish (optional)

Instructions:

  1. Preheat oven:
    Heat oven to 190°C.
  2. Assemble nachos:
    Spread tortilla chips evenly on a baking tray.
    Sprinkle over black beans, grated cheese, and chilli powder (if using).
  3. Bake:
    Bake for 8–10 minutes, or until the cheese is melted and bubbly.
  4. Serve:
    Serve immediately with salsa, guacamole, sour cream, and fresh coriander leaves.

Optional Add-Ins / Variations:

  • Add leftover chicken, cooked mince, or chopped tomatoes for a heartier meal.
  • Drizzle with hot sauce or jalapeños for extra spice.
  • Layer with refried beans for a richer texture.
