Ingredients:

  • 1 large pineapple, chopped (about 5 cups frozen pineapple)
  • 400 ml coconut cream
  • Sugar, to taste
  • Fresh tropical fruits for topping (mango, kiwi, berries, cherries, or your favourites)
  • Optional adult version: a splash of rum

Instructions:

1. Prepare the pineapple:
Chop the pineapple into small chunks. Spread them on a tray or place in a freezer bag and freeze until solid. Once frozen, break the pineapple into smaller pieces.

2. Blend the dessert:
Place the frozen pineapple in a blender. Add coconut cream and sugar to taste. Blend until smooth and creamy.

3. Serve:
Spoon the mixture into bowls or cups. Top with freshly chopped tropical fruits.

4. Optional adult version:
For a boozy twist, add a splash of rum to the blender with the pineapple mixture before blending.
