Ingredients:

  • 250g butter
  • 2⅓ cups castor sugar
  • 5 eggs
  • 90g cacao
  • ½ tsp baking powder
  • 1 cup all-purpose flour
  • 150g dark chocolate, chopped

Instructions:

  1. Preheat your oven to 165°C. Lightly grease a 24 cm pan with butter or non-stick spray.
  2. In a mixing bowl, cream the butter and castor sugar together until smooth and fluffy.
  3. Add the cacao, one spoonful at a time, mixing well between each addition.
  4. Add the eggs, one at a time, mixing until fully combined before adding the next.
  5. Sift the flour and baking powder together.
  6. Add the dry mixture to the batter and mix until well combined.
  7. Fold in the chopped dark chocolate.
  8. Pour the brownie batter into the greased pan.
  9. Bake for 40 minutes, or until the edges are firm, the centre is soft, and the top forms a crisp layer.

Tips:

  • For extra richness, add a handful of chocolate chips on top before baking.
  • Allow the brownies to cool completely before slicing for clean, even squares.
  • Serve warm with ice cream or drizzle with melted chocolate for a decadent treat.
