Ingredients:
- 250g butter
- 2⅓ cups castor sugar
- 5 eggs
- 90g cacao
- ½ tsp baking powder
- 1 cup all-purpose flour
- 150g dark chocolate, chopped
Instructions:
- Preheat your oven to 165°C. Lightly grease a 24 cm pan with butter or non-stick spray.
- In a mixing bowl, cream the butter and castor sugar together until smooth and fluffy.
- Add the cacao, one spoonful at a time, mixing well between each addition.
- Add the eggs, one at a time, mixing until fully combined before adding the next.
- Sift the flour and baking powder together.
- Add the dry mixture to the batter and mix until well combined.
- Fold in the chopped dark chocolate.
- Pour the brownie batter into the greased pan.
- Bake for 40 minutes, or until the edges are firm, the centre is soft, and the top forms a crisp layer.
Tips:
- For extra richness, add a handful of chocolate chips on top before baking.
- Allow the brownies to cool completely before slicing for clean, even squares.
