Makes: ±12 large vetkoek | Prep: 20 min + ½ hrs rising | Cook: 20 min

Vetkoek — the golden, deep-fried dough that’s been a South African staple for generations. Whether stuffed with savory curried mince, sweet apricot jam, or melted cheese and golden syrup, this recipe delivers that perfect crispy-outside, cloud-soft-inside texture every single time.

Best part? It uses pantry staples and is so forgiving — even beginner bakers nail it on the first try!

Ingredients

  • 1 tbsp sugar
  • ½ cup lukewarm water (about 38°C / body temp)
  • 20 g instant or active dry yeast (2 standard sachets)
  • 8 cups cake flour or all-purpose flour
  • 1½ tsp salt
  • 2–2½ cups additional lukewarm water (added gradually)
  • Sunflower oil, for deep frying

Method

  1. Activate the yeast: In a small bowl, stir sugar into ½ cup lukewarm water until dissolved. Sprinkle yeast on top and let sit 10 minutes until foamy and bubbly. (No foam? Your yeast is dead — start over with fresh yeast.)
  2. Mix the dough: In a large mixing bowl, combine flour and salt. Make a well in the center, pour in the foamy yeast mixture, and stir with a wooden spoon.
  3. Add water gradually: Pour in lukewarm water a little at a time (start with 1 cup), mixing until the dough comes together. It should be soft, elastic, and slightly sticky — not dry or stiff.
  4. Knead lightly: Turn onto a floured surface and knead for 2–3 minutes until smooth. Don’t over-knead!
  5. First rise: Place dough in a lightly oiled bowl, cover with a damp cloth or plastic wrap, and let rise in a warm spot until doubled in size (½ hours).
  6. Knock back & second rise: Punch down the dough to release air, cover again, and let rise until doubled once more (30–45 minutes).
  7. Shape the vetkoek: Turn dough onto a floured surface. Divide into small golf-ball-sized pieces (for kids) or larger tennis-ball-sized pieces (for adults). Flatten slightly into rounds and place on a tray. Cover and rest 30 minutes.
  8. Heat the oil: Fill a deep pan with sunflower oil (enough for vetkoek to float). Heat to 170–180°C (test with a small piece of dough — it should sizzle and rise immediately).
  9. Fry in batches: Gently lower 3–4 vetkoek into the hot oil. Fry 3–4 minutes per side until deep golden brown. Don’t overcrowd the pan!
  10. Drain & serve: Remove with a slotted spoon and drain on paper towels. Serve warm with your favorite filling!

Pro Tips for Perfect Vetkoek

  • Oil too cool? → Greasy vetkoek. Too hot? → Burnt outside, raw inside.
  • Make ahead: After the first rise, refrigerate dough overnight. Shape and fry fresh the next day.
  • Freeze cooked vetkoek: Cool completely, freeze in a ziplock. Reheat in oven at 180°C for 8–10 min.
  • Mini vetkoek sliders are a hit at kids’ parties!
