Croissants are a warm, flaky pastry that’s hard to resist. The first time baking them can feel a bit intimidating, but this simplified recipe makes it easy. Whether you use a stand mixer with a dough hook or knead by hand, you can achieve delicious results. While some may look a little “funny,” they taste better than most store-bought croissants.
This recipe gives you a step-by-step approach to enjoy homemade, buttery croissants at home with confidence.
Ingredients
- 7 g dried yeast
- 60 g sugar
- 250 ml warm milk
- 500 g all-purpose flour
- A pinch of salt
- 275 g chilled butter
- 1 egg, beaten
Method
- In a small bowl, mix 5 g of sugar with a little of the warm milk, then add the yeast. Let it sit for 5 minutes or until foaming.
- In a separate bowl, combine the flour, remaining 55 g sugar, and salt. Using a dough hook (or by hand), slowly mix in the yeast mixture and remaining milk until the dough comes together.
- Do not over-knead; the dough should be soft and slightly crumbly. Test by pressing a small piece between your fingers.
- Cover the bowl with a damp cloth and allow the dough to rise for 1 hour.
- On a floured surface, roll out the dough into a large rectangle. Dot the surface with butter, fold, and repeat until the dough forms a layered rectangle.
- If the environment is warm, place the dough in the fridge for 30–60 minutes before continuing.
- Roll out the dough into a large rectangle again, repeat the butter dotting, then cover with cling film and rest overnight in the fridge.
- The next day, roll out the dough into a large rectangle and cut into triangles.
- Roll each triangle from the base to the tip and curve slightly into a crescent shape. Place on a baking tray and allow to rise for 1 hour.
- Preheat the oven to 220°C. Brush each croissant with the beaten egg.
- Bake for 15 minutes or until golden and flaky.
