Ingredients:

  • 750 ml white wine vinegar
  • 5 garlic cloves, diced
  • 10 ml paprika
  • 15 ml peri-peri spice (adjust to taste)
  • Pinch of salt
  • 30 ml sugar
  • 15 ml cornflour
  • 2 tbsp cold or room-temperature water

Instructions:

  1. Start the base:
    In a saucepan over medium heat, combine vinegar, garlic, paprika, peri-peri spice, and salt. Stir until well mixed.
  2. Add sweetness:
    Stir in sugar until fully dissolved. Let the sauce gently simmer for about 5 minutes.
  3. Thicken the sauce:
    In a separate bowl, mix cornflour and water until smooth and lump-free.
    Slowly whisk this mixture into the simmering sauce.
    Continue to simmer for 2 more minutes, stirring constantly until thickened.
    Tip: For a thicker sauce, add more cornflour mixed with water gradually.
  4. Store:
    Pour the sauce into a clean glass jar. Allow to cool to room temperature before sealing.
    Store in the fridge and use as needed.

Optional Tips:

  • Adjust peri-peri spice to make it milder or hotter.
  • Use as a marinade, dipping sauce, or burger topping.
  • Shake well before each use if stored in the fridge.
